Recipe: Blueberry Yogurt Muffins

Blueberries + Yogurt = YUM.


Ingredients
  • 2 cups flour
  • 3/4 white sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 large eggs, at room temperature
  • 1 2/3 cups plain yogurt
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 cup frozen blueberries
  • 1 tablespoon granulated sugar


Directions

  1. Preheat the oven to 375°. Spray muffin pan with non stick spray.
  2. Blend dry ingredients.  Add eggs, yogurt, and butter.  Mix only until just combined.  Fold in vanilla and blueberries. 
  3. Spoon the batter into the prepared muffin cups.
  4. Sprinkle the granulated sugar over the muffins.
  5. Bake for 20-25 minutes, until the muffins are springy.  Cool slightly in the pan and then transfer to a wire rack to avoid squishiness.
  6. Eat!
