Recipe: Almost Guilt Free Brownies



Ever want to eat half a pan of brownies?  All the time?  Yeah, me too.  It's an easy little switch-a-roo to make them much lower in fat and just about as tasty.



I made some brownies based on this recipe at Food.com. I didn't have low-fat yogurt on hand, I had homemade whole milk yogurt, so mine weren't quite as guilt free as they could have been, but after eating a quarter of the pan I didn't feel bad at all.

Ingredients:
  • 1 cup sugar 
  • 3/4 cup flour 
  • 1/2 cup cocoa 
  • 2 eggs 
  • 2 teaspoons cornstarch 
  • 1/4 teaspoon baking soda 
  • 1/4 teaspoon salt 
  • 2/3 cup plain yogurt 
  • 1/2 teaspoon vanilla
  • nonstick cooking spray 
Directions: 
  1. Preheat oven to 350°F.
  2. Mix all ingredients together until smooth.
  3. Spray an 8x8 pan with nonstick cooking spray and spread the batter evenly.
  4. Bake for 30-35 minutes until center is set.
  5. Devour.
