Recipe: Fresh Pesto and Pasta

Isn't summer the most delicious time of year? I get to eat fresh picked raspberries from my parents house, my friend Alicia is growing yummy veggies that I bought at the farmer's market, and there is finally enough basil grown to make homemade pesto!  If you've never made pesto, it's sooooo easy and soooooo yummy!




Homemade Pesto

Ingredients:
  • 2 cups fresh basil leaves
  • 1/3 cup olive oil
  • 1/3 cup nuts (I used unsalted almonds)
  • 3 garlic cloves, peeled
  • Salt and pepper to taste

Directions:
  1. Pulse the nuts in food processor a few times.
  2. Add leaves and garlic and pulse together.
  3. While the food processor is blending, stream in the olive oil.
  4. Add seasoning to taste.


I then turned mine into a pasta dish by making some cheese tortellini and sauteing a diced onion, diced tomato, and sliced zucchini in olive oil and then mixing well. Top with Romano cheese and EAT! Yummmm :)
